Short answer

NIMA Cafe in Cherngtalay serves four halal pasta dishes — Spaghetti Carbonara and Spaghetti Bolognese at 249 ฿ each, Chicken Pesto Pasta and Garlic Butter Shrimp Pasta at 289 ฿ each. Carbonara uses chicken bacon and egg yolk; bolognese uses slow-cooked minced chicken ragù. We're open Friday to Wednesday, 10:00–19:00, closed every Thursday, on Srisoonthon Road about 1 km from Surin Beach.

Why halal pasta is harder to find than it sounds

Classic Italian pasta recipes were never designed with halal kitchens in mind. Carbonara needs bacon. Bolognese needs minced meat. In many restaurants in Phuket, those ingredients come from sources that don't work for guests eating halal — which rules out a huge part of the island's visitors and residents before anyone even looks at the menu.

At NIMA Cafe, everything we serve is halal. That means the bacon in the carbonara is chicken bacon, the ragù in the bolognese is slow-cooked minced chicken, and neither dish has been watered down to compensate. The result is pasta that actually tastes like pasta, not a workaround.

The four pastas on our menu

We keep the pasta section focused: four dishes, each one distinct. Creamy, herby, buttery or rich with tomato — there is something for most moods. You can see the full menu with photos before you visit.

Spaghetti Carbonara — 249 ฿

This is the one people ask about most when they hear we do halal pasta. Creamy carbonara sauce made with egg yolk, parmesan and black pepper, tossed with spaghetti and halal chicken bacon. It is rich without being heavy. No cream added to the sauce — the texture comes from the egg yolk and parmesan the way it should. If you have not had a proper carbonara in a while because you thought it was off the table, this is the one to order.

Spaghetti Bolognese — 249 ฿

Slow-cooked minced chicken ragù in a rich tomato sauce, finished with parmesan and parsley. The chicken is cooked down long enough that the sauce has depth — it does not taste like a quick weeknight stir-fry dressed up with tomato paste. Mild by default, no chili in the base. A solid, comforting plate.

Chicken Pesto Pasta — 289 ฿

Spaghetti with grilled chicken, basil pesto, cherry tomatoes and parmesan. Lighter than the carbonara, brighter than the bolognese. The pesto keeps it fresh rather than heavy, and the cherry tomatoes add a little acidity that stops it feeling flat. Good if you want something green-tasting and not too rich after a morning at the beach.

Garlic Butter Shrimp Pasta — 289 ฿

Spaghetti with shrimp sautéed in garlic butter, chili flakes and parsley. This one has the most heat of the four — not aggressively spicy, but the chili flakes are there. If you want it milder, just say so when you order; we adjust spice level on request (mild, medium or hot). The garlic butter sauce is simple and direct. No cream, no tomato, just the shrimp and the pan.

A quick comparison if you are deciding at the table:

All four are made with spaghetti. Spice level can be adjusted on any dish — just ask.

What to drink with pasta at NIMA

A cold Iced Americano at 99 ฿ works well if you want something simple. If you are eating the garlic shrimp and want to cool down, the Strawberry Soda or Peach Soda (both 99 ฿) cut through the butter nicely. For something more substantial alongside the bolognese, the Nima Signature — espresso with lychee, pomegranate and pineapple at 149 ฿ — sounds unusual but handles the tomato acidity well. Our coffee and matcha guide covers the full drinks menu if you want to plan ahead.

Halal kitchen — what that means in practice

Everything we serve is halal. The chicken bacon in the carbonara is chicken bacon, not a conventional substitute. The bolognese ragù is minced chicken, slow-cooked in tomato sauce. Something before or after the pasta

If you are hungry enough for a starter, the Greek Salad at 199 ฿ or the Caesar Salad at 229 ฿ both work well before a pasta. For dessert, the bakery counter usually has brownies at 39 ฿ and a Basque Burnt Cheesecake at 149 ฿ — though the counter selection changes daily, so what is there at 10:00 on a Wednesday is not guaranteed to still be there at 17:00. Worth checking when you arrive.
